Gazpacho is like the best of summer served in a cup. Tis’ the season to… eat fresh! And Gazpacho is one of the tastiest, easiest ways to do just that. Take advantage of seasonal ripe tomatoes and other garden fresh veggies to make this delicious cold soup. I call it Rustic Gazpacho because there is nothing fancy about its preparation. All you need is a good knife and a food processor.
The added bonus of this soup? You get about two daily servings of vegetables in just one serving of Gazpacho.
NOTE: you can prepare Gazpacho a day in advance. This allows time for the flavors to better meld together to provide that zesty symphony of freshness.
